    WHAT THE WEEKEND IS ABOUT...
     
    The best meals are often spontaneous and unplanned. A perfect cheese, great bread, a good bottle of wine and scintillating conversation, shared around a kitchen table, is hard to beat. But wouldn't it be great if you could casually put something spectacularly delicious together from whatever you have in your cupboard, any time your friends call in unexpectedly?
     
    With a few strategic ingredients (dry, tinned or frozen) you'll always be prepared for full-proof, quick and delicious dishes that can be varied and adapted according to each season and to your every mood...

    The course is limited to 7-8 people. It is informal and fun (and hands-on for those who would want it). There is one single room (allocated on a first come first sold basis), otherwise prices are based on two people sharing. Double rooms may therefore carry a single occupancy supplement of 100 euros for a weekend course and 250 euros for a week-long course.
     
    Excursions may include tutored winetastings, Narbonne's famous food market, a goatscheese farms, a bee-keepers, a wine-maker, an olive press and Medieval Cities. Obviously we cannot fit them all into one weekend so they are flexible and provided all guests concur, they can be changed to fit your wishes.

    Itinerary

    Friday DAY 1
    After the pick-up from the airport we head straight to an organic beekeeper in the Corbieres mountains to learn about honey and taste all the different varieties of this floral sweetness. After this we have planned another visit - this time to a goatfarm to taste their range of superb cheeses. At home, after settling in, there is a talk on 'cooking with flavours' and on 'stocking your larder' and a cookery demonstration, followed by dinner.
     
    Saturday DAY 2
    After breakfast, a morning visit to a wine-maker (to see wine being made) and/or and snail-grower... This is followed by a leisurely lunch in Restaurant La Selette, then home for some relaxation. Later on we'll have another cookery demonstration of food produced from the larder, then dinner.

    Sunday DAY 3
    After a relaxed breakfast, we have planned to visit Narbonne and its famous food market and its extensive openair market. There is time for a stroll to the Cathedral and the shops before we head for the Canal du Midi, for a delicious, sit-down water-side picnic. We'll walk home along the pretty Rigole canal and there is an option to visit the famous Patchwork museum/art gallery in the afternoon. Followed by our final dinner in Mirepeisset's great little restaurant La Taverne nextdoor.
     
    Monday DAY 4
    After breakfast we're off to the Medieval Citadel of Carcassonne with plenty of opportunity to stroll around the shops or a more cultural visit to the inner walls... There is time for a quick final lunch and then we'll head for the airport for our flight home...
     
    Guests will take home a pack with all the recipes for dishes demonstrated and eaten during the week as well as information on wine matching and buying.
