THE 2012 COOKERY COURSES

    OUR PHILOSOPHY

These courses are NOT about toiling over masterpieces that take hours to prepare. And they have nothing to do with competing (though showing-off a little is permitted!) What these courses ARE about is acquiring skills and confidence to cook instinctively for flavour and for aesthetic pleasure - a kind of simplified fun way of cooking but with plenty of vigour and dash...

Once you have mastered this simple method of matching complementary flavours, you can go on to create an unlimited range of vibrant and original dishes which can in turn be adapted and re-invented according to the changing ingredients of each new season - ultimately leading to the point where no recipes are needed.

This means that instead of going shopping with a pre-written list (and finding some items are unavailable or not up to scratch) you simply buy what is fresh and at its best, and create your own unique recipe at home. That said, you will return home with all the information, checklists and recipes you need to create this new personal cuisine.

But these courses are not just about cooking - there are also plenty of foodie excursions and communal meals as well as an element of culture. Click here to find out more about THE COOKERY COURSES...

    THE 2012 ART COURSES

As well as PRACTICAL art sessions, our courses include a THEORETICAL session incorporating art-history and advice on contemporizing traditional artforms.

All materials and tuition are included, and there are both OUTDOOR and STUDIO sessions.

Naturally, because this is the South of France, there will be plenty of relaxing around the table and there is also a waterside picnic planned around an outdoor painting session. For inspiration we have also included visits to Roman towns or Cathar villages as well as colourful outdoor markets. And even the shoppers among you will be looked after...
