COOKERY WEEKS

    Ever wondered what it would be like to cook intuitively, without the need for recipes? Perhaps you would like to simplify your cooking? Or cook more in tune with the seasons? Or maybe you're just looking for a relaxing, food-oriented holiday?
     
    Here in relaxed surroundings, we will demonstrate how you (the cook) can create an infinite amount of delicious and unique dishes - simply by using a straightforward method that combines flavours which complement each other (whilst at the same time including new techniques and cooking methods).

    While the dishes demonstrated are quick and eclectic enough to appeal to those with busy lifestyles, they are also pretty and delicious enough to serve at smarter occasions - which I'm sure you will do at every opportunity!
     
    Weeks include all accommodation, cookery demonstrations, tutored wine tastings and visits to markets and vineyards, as well as lots of communal eating both at home and in restaurants. Excursions may include a visit to a local artisan baker, a traditional olive press, an award-winning goatscheese farm, a beekeeper, the oysterbeds in the Bassin de Thau or the salt-pans of Gruissan renowned for its fleur de sel. And provided everyone agrees, it's no problem to switch excursions around.
     
    *) Courses are limited to 7 participants. We have some single rooms but most are twins or doubles. If you do want a single room and they are no longer available, we may have to accommodate you in a nearby B&B (see booking information) for single occupancy supplement.

    • for men only............... May 30-June 2 - we're not teaching survival skills here - these men learn to seduce by way of cooking!

    • kitchen suppers.......... Sept 26-29 - to turn the daily chore of cooking into fun
       
    • winter comforts.......... Oct 17-20 - warming comfort food for colder days

    • the best of summer.... May 18-25 - think wild rocket, asparagus, baby artichokes, tiny broadbeans, the first of the summer's fragrant cherries and berries, peaches and melons...
       
    • easy entertaining.........Sept 7-14 - a fullproof guide to guaranteed relaxed entertaining - includes menu planning, choosing wine etc.

     
    Remember that during the courses we will be serendipitous of mind - as the French have been for centuries. We will forage the markets (and countryside) for the best produce of the season and turn it into fabulous, modern food that is good to eat and pretty to look at.
     
    You will return home armed with fabulous ideas for dishes that can be re-invented and adapted according to the changing ingredients of every season.
