SUMMER JOY - june 25-28

    WHAT THE WEEKEND IS ABOUT...

This course celebrates all that is good about a French summer! Think peaches and sunshine and cool fruity wine... Think baby artichokes and wild rocket, asparagus and cherries... Think effortless summer cooking...

As with all the courses, teaching is based on the 'intuitive cooking' principle in which you learn to match complementary flavours to make dishes that hum with flavour and burst with originality.

Excursions may include visits to an olive press, different wine-makers, an organic bee-keeper, an award-winning goatscheese farm and an artisan baker. (Excursions are flexible and changeable wherever possible... provided all guests concur).

The course is limited to 6 people. It is informal and fun (and hands-on for those who would like this).

And since we normally experience 325 sunny days in the year, I dare promise you sunshine! Can you think of a more pleasant way to learn making fabulous food that can be adapted again and again to suit all seasons and all moods?

    ITINERARY

day 1 Friday 25th - after the pick-up from the airport we head straight for the Oulibo olive presses in Bize for oil and olive tastings. At home there will be time to settle in before a talk on "cooking with flavours" and a cookery demonstration, followed by dinner.

day 2 Saturday 26th - after breakfast, a morning visit to Narbonne's bustling foodmarket. There is time for a stroll to the Cathedral and the shops before lunch in a nice city centre restaurant. When we get home there is time to relax a little - perhaps a walk along the Canal du Midi behind the house and a waterside aperitif. This is followed by another cookery demonstration (with produce bought at this morning's market) and dinner at home.

day 3 Sunday 27th - after a leisurely breakfast, there is time for a visit to the pretty village of Le Somail or perhaps some relaxation on the roof terrace. Then it is off for a picnic beside the river Orb in the company of wine-expert Jacinta Delahaye who will give us a tutored wine tasting. There will be time for a little sunbathing and swimming at La Hacienda before we return home for another cookery demonstration and our final dinner at home.

day 4 Monday 28th - a lazy breakfast is followed by a visit to the Medieval Citadel of Carcassonne and an early lunch before leaving for the airport for the flight home.
